EASY Lemon Tahini Dressing Recipe
When I first started eating a plant based diet, I despised salads. Over the years, though, I’ve grown to love a good hearty salad. The key, for me at least, is to add a ton of great veggies and to top if off with a really excellent salad dressing.
By making your own dressing you can save money and control exactly what goes into it. A comparable dressing at Trader Joe’s has vegetable oil added (“Green Goddess” — very similar to this recipe, except theirs has parsley/chives blended in) . Skip the refined oils and try the recipe below. Let me know what you think, if you try it!
¼ c tahini
2 tbsp lemon juice
2 cloves minced garlic*
1 tbsp maple syrup
salt and pepper
4 tbsp water (or more, depending on desired consistency)
Slowly combine ingredients — it will take a few minutes to come together, but keep stirring until all of the tahni has dissolved.
*If you prefer, you can roast the garlic before adding it, but the raw garlic mixed with the acidic lemon is actually very tasty!
