LCHF/Keto Lemon & Poppy Seed Muffins | The Keto Kitchen I’ve never baked lemon and poppy seeds together. Now that I’ve done it I understand why it’s such a known thing! They are nice and hard on the outside but soft and moist inside. | The Recipe | INGREDIENTS: – 3/4 cup almond flour/meal – 1/4 cup flaxseed meal (Mine is a mix of walnut and flaxseed meal) – 1/4 cup (1/3 cup if you don’t have liquid stevia) sweetener, granulated – 1 teaspoon baking powder – 2 tablespoons poppy seeds – 1/4 cup butter, melted – 1/4 cup heavy cream – 3 large eggs – Zest of 2 lemons – 3 tablespoons lemon juice – 1 teaspoon vanilla extract/flavouring – 10 drops liquid Stevia (if you don’t have liquid stevia, don’t worry about it just make your sweetener 1/3 cup) You can make the almond flour 1 cup if you don’t have flaxseed meal but it won’t have the same texture as seen in this recipe. I suggest flaxseed because it’s very good for you in terms of nutrition and helps for binding these muffins, giving them that lovely moist yet stable inside. METHOD: ​ 1. Pre-heat oven to 170C. In a bowl, combine the almond flour/meal, flaxseed meal, sweetener, and poppy seeds together. 2. Stir in the melted butter, eggs, and heavy cream until smooth, make sure there are no lumps are in the batter. 3. Once smooth, add in the baking powder, liquid stevia, vanilla extract, lemon zest, and lemon juice. Mix thoroughly until well combined. 4. Measure the batter out equally between 12 cupcake molds. Silicone moulds or paper moulds will be easier to remove once baked but you can use a muffin pan – just make sure you grease it. 5. Bake for 18-20 minutes or until slight browning appears. If you want a nice crust on the muffins, bake for a little longer but keep an eye on them. 6. Remove from the oven and let cool for 5 minutes. Then move to a wire rack to prevent the muffins getting damp from sweating as they continue to cool. 7. Enjoy alone or cut in half and covered in butter! MACROS: Serves 12.
